Is this a course I have to keep up with?

No — it's a kit of tools and printables you download once and use at your own pace. The curriculum reads in an evening; the Pantry Map and labels are working documents you'll print and reuse every season.

Are the recipes in the kit safe?

We're careful with that word. The Cantry doesn't test recipes — laboratories and process authorities do. Every recipe the kit points to is published by a named tested authority (USDA, NCHFP, state Extension services), labeled with its source, and linked to the original so you can verify against it. That provenance — not our say-so — is exactly what "use a tested recipe" means.

I've never canned anything. Is this too advanced?

It's built for you. The curriculum assumes zero experience and starts with the very first decision (which method, for which food), an equipment list with a starter budget, and a first-jar walkthrough.

I've been canning for years. Is there anything here for me?
